Lamb Sous Vide

The dish is bursting with flavour and adds a ‘wow factor’ to a meal with guests.

This dish can be prepared in advance and served quickly for a really impressive dish for yourself or with guests. The ‘trick’ is simply to make everything the day before and do the final finishing 20 minutes before your guests arrived. The great thing is it’s packed with flavour and surprisingly nutritious.

Although we’d recommend using a sous vide machine, impressive results can be achieved using a close-fitting freezer bag and a thermometer.

Ingredients (serves 4)

  • 4 x Lamb fillet
  • Lamb or vegetable stock
  • Peas or Edame beans

Huevos Rancheros (Ranchers eggs)

Get your day off to a great start. Most of this can be made the day before. So if you’ve got a busy life, do the base at the weekend then give it a few ‘twists’ (see below) during the week.

All recipes recommend using organic ingredients when available but we’d rather you had healthy balanced food than didn’t use these recipes at all.

Ingredients

  • 1 onion (or 2 shallots)
  • 1 or 2 garlic gloves
  • 2 bell peppers
  • 1 x can: Black or red kidney beans
  • 1 x can: Chopped tomatoes or salsa
  • Cayenne pepper
  • 2 – 3 eggs
  • Either: Chopped herbs (such as basil, parsley or coriander) or chopped chives / spring onions

Method

  • Prepare the ingredients listed below.
  • Warm a frying pan for a couple of minutes then add a splash of oil. The right temperature is when a small piece of onion starts to sizzle in the oil.
  • Dice the onion (tip: use the onion root/base to ‘hold it together’ whilst you finely dice) and fry lightly for 5 minutes.
  • Add chopped garlic and chopped peppers and continue to heat for another 5 minutes.
  • Once the above has reduced, add the beans and tomatoes and reduce (10 minutes)
  • Add the cayenne pepper (to taste)

If doing the above dish for later use then you can pause here. Simply keep in a bowl in the fridge.

Serving

Serve up using any of the following ways:

  • spoon the mix into tapas dishes. Using a spoon make a ‘well’ in the centre. Crack an egg into it and bake for 10 minutes until the egg whites are solid, but the yoke is runny
  • Make a nest out of tortilla wraps by putting the wrap in a bowl. Lightly brush with butter and microwave for 2 minutes. Fill with the mix and place a poached egg in the centre.
  • Simply, add to a dish with chopped avocado and sour cream. Place a poached egg on top

In all the above, garnish with either chopped herbs or chopped chives and spring greens.

Detox lemon & ginger cordial

Is life worth living? It depends upon your liver!

This simple recipe takes less than 20 minutes to make and will last you for months. Simply, make, bottle and store. It serves as a great daily ‘shot’ or a mixer. However, it’s loaded with liver-cleansing properties (see below) and can be made to your own taste.

Ingredients

  • 4 to 6 lemons
  • Fresh ginger root (a large handful)
  • 2 – 3 Fresh turmeric roots (or powder if not available).
  • Black pepper

Method

  • Simply cut the lemons into small pieces
  • Add 4 to 6 litres of water (depending on how many bottles you have)
  • Peel and dice the ginger and add.
  • Bring to a simmer
  • Add the turmeric
  • Strain using a sieve or similar. (The finer the mesh the clearer the cordial).
  • Grind some black pepper into the solution whilst still hot
  • Pour into the bottles and seal

Reason why it’s so good

Turmeric is known for it’s anti-inflammatory properties, which combined with lemon and ginger help get it into your liver. The black pepper acts as a catalyst and can allow the liver to readily activate the enzymes in the turmeric to assist in rapid detoxification of the liver.
